THE BUILDER'S PLATE.

Protein takes the lead this week — three dishes built to feed the strength you're training. Nothing bodybuilder-bland about it: herbs, glazes and real flavour, with 24 grams or more on every plate.

Recipe № 01 · Breakfast

Herbed Cottage Cheese & Tomato Toasts

Whipped until silky, piled onto good toast with blistered tomatoes — the quiet protein champion of the dairy aisle, finally dressed for company.

1Serving

Ingredients

  • 150 g cottage cheese
  • 2 slices wholegrain or sourdough bread
  • 150 g cherry tomatoes, on the vine if you have them
  • 1 tsp olive oil · pinch of dried oregano
  • Fresh chives and basil, chopped
  • Squeeze of lemon · black pepper · sea salt
  • Chilli flakes (optional)

Method

  1. Blitz the cottage cheese with a squeeze of lemon and a pinch of salt until completely smooth — thirty seconds in a small blender transforms it.
  2. Pan-blister the tomatoes in olive oil with oregano over high heat for five to six minutes, until their skins pop and they turn jammy.
  3. Toast the bread, spread the whipped cottage cheese generously, and spoon the warm tomatoes on top.
  4. Finish with herbs, black pepper and chilli flakes if you like a little heat.

Substitutions

Ricotta works for a milder, softer spread (a little less protein). Gluten-sensitive? Any good gluten-free loaf. Add a soft-boiled egg on the side to push past 30 g.

Nutrition notes

Cottage cheese is one of the highest-protein foods in the fridge, rich in slow-digesting casein — a breakfast designed to keep you comfortably full through a working morning.
Recipe № 02 · Lunch or Dinner

Greek Turkey Meatballs with Tzatziki

Lemony, herb-packed meatballs over fluffy quinoa with cool tzatziki — batch-friendly, lunchbox-proof, and somehow even better the next day.

Ingredients

  • 350 g turkey mince
  • 1 small red onion — half grated, half sliced
  • 1 garlic clove, grated
  • 1 tsp dried oregano · zest of 1 lemon
  • Fresh parsley and mint, chopped
  • 120 g quinoa, rinsed
  • 150 g Greek yogurt · ½ cucumber, grated
  • Olive oil · sea salt · black pepper

Method

  1. Mix the turkey with the grated onion, garlic, oregano, lemon zest, half the herbs, salt and pepper. Roll into twelve small meatballs.
  2. Pan-fry in olive oil over medium heat for 10–12 minutes, turning for colour on all sides, until cooked through.
  3. Meanwhile, cook the quinoa. Squeeze the grated cucumber dry and stir it into the yogurt with a pinch of salt and a little mint — your five-minute tzatziki.
  4. Plate the quinoa, meatballs and sliced onion, with the tzatziki alongside and the remaining herbs on top.

Substitutions

Chicken mince works identically; lamb makes it richer. Swap quinoa for bulgur or orzo. Dairy-free? A tahini-lemon sauce instead of tzatziki.

Nutrition notes

Lean turkey delivers nearly forty grams of protein per serving — the kind of lunch that supports strength training without needing a nap afterwards.
Recipe № 03 · Dinner

Miso-Glazed Tofu & Broccoli Bowl

Crisp-edged tofu lacquered in a sweet-savoury miso glaze, with charred broccoli over rice — plant protein with absolutely nothing to apologise for.

2Servings

Ingredients

  • 400 g firm tofu, pressed and cubed
  • 1 head of broccoli, in florets
  • 150 g brown rice
  • 1 tbsp cornflour
  • Glaze: 1 tbsp white miso, 1 tbsp soy sauce, 1 tsp honey or maple, 1 tsp rice vinegar, 2 tbsp water
  • 1 tsp sesame seeds · 1 spring onion, sliced
  • Neutral oil · sea salt

Method

  1. Cook the rice. Toss the tofu cubes in cornflour with a pinch of salt.
  2. Pan-fry the tofu in a little oil over medium-high heat until golden and crisp on most sides, about eight minutes. Set aside.
  3. In the same pan, char the broccoli with a splash of water, lid on, for four to five minutes — tender inside, blistered outside.
  4. Whisk the glaze, pour it over tofu and broccoli together, and let it bubble for one minute until glossy and clinging.
  5. Serve over the rice, scattered with sesame and spring onion.

Substitutions

Tamari keeps it gluten-free. Swap broccoli for green beans or pak choi. Not a tofu house? The same glaze is wonderful on salmon or chicken thighs.

Nutrition notes

Tofu is a complete plant protein, and miso brings depth without heaviness — proof that a strength-supporting dinner can be entirely plant-based and entirely delicious.
